Why is a “disinterested trustee” required for the SNT in this situation?

You are correct that the interested trustee restriction is in place in the SNT because a trustee who is also a remainderman (or potential remainderman) would have the power to potentially shift benefits to himself, which could be viewed as a power of appointment (or possibly a taxable gift, if property is distributed from the trust).
